Coconut Ginger Chicken


Wow, this recipe is DEEEELICIOUS!!  I didn’t read the whole thing before making it, so I was a little discouraged that I had to cook a little before putting everything in the crockpot (I’m lazy like that).  BUT you cook it in the insert on the burner!  I didn’t do that but next time I will.

The ginger, garlic, sweet onion paste smelled so heavenly, I wanted to eat just that.  I wished I could capture the aroma on my phone & send it to everyone I know.

I made a vegetarian version (there are 3 vegetarians in my house) with Quorn “chicken” tenders.  I wasn’t sure how it would turn out, texture-wise, but it was delicious, too!

I wasn’t sure if the seeds I used were coriander.  My husband doesn’t label things, even when he goes mad at the Indian market & brings home loads of spices.

This dish turned out so deliciously creamy.  My picky nephews didn’t complain & they complain about dinner almost every night!

I will be making this dish in the future.  Often.  Very often!
